Zucchini Ribbon Salad

What happens when you mix hot weather, hunger, and a Monday? This super easy salad recipe.

Cooking is kind of therapy for me. I love it even after a long day, but there are some days when I want a fast & easy recipe. This salad was taken from Pinterest as most of you probably recognized (original recipe here), but I placed my own little spin on it. This recipe is perfect for your veggies in the fridge that you are looking for something to do with.

Zucchini Ribbon Salad

What you’ll need:

  • 1 medium to large zucchini
  • 1 lemon
  • olive oil
  • salt
  • pepper
  • black olives (optional)
  • goat cheese
  • spinach (optional)

Optional Add-Ins:

  • yellow squash
  • cucumbers
  • avocado
  • kale
  • basil
  • mint
  • jicama
  • grilled chicken

Grab a large bowl and your zucchini. To get your zucchini in ribbons all you will need is your vegetable peeler. Start on one side and run the peeler through the zucchini until you reach the middle, then flip it over and start on the other side and make ribbons until you can’t anymore. Be careful not to get your fingers! 🙂

When you are done making the ribbons, toss them in the zest and juice of 1 lemon, about 1 to 1-1/2 tablespoons of olive oil and salt and pepper to taste. At this point I chopped up about a handful of black olives (kalamata olives would work as well), finely chopped spinach, and crumbled in some goat cheese.

That’s it. Easy. Simple. Delicious.

Major plus: The reason why I love this recipe even more is because you can add in/substitute so many other ingredients. Don’t like spinach? Use kale, basil or mint. Love squash? Add those in ribbons as well. Avocado, cucumbers, or jicama would also add great taste and texture. Need some protein, grilled chicken would be perfect.
